Needlefish

Slender predatory fish of the family Belonidae, found throughout the Atlantic and Mediterranean and known in Spain as aguja. The garfish (Belone belone) is the species most commonly tinned, particularly by northern Spanish conserveras, where it is packed in olive oil and regarded as a specialty product. The flesh is firm and delicate; the bones, tinged an unusual green from the pigment biliverdin, soften fully during the canning process.
