Snapper

Snapper is a diverse family of fish (Lutjanidae) found in tropical and subtropical marine waters worldwide, with over 100 species of commercial significance. Red snapper (Lutjanus campechanus) from the Gulf of Mexico is the most commercially important US species. The flesh is firm, white, moist, and mildly sweet, making it one of the most valued food fish in many markets. Snapper is primarily a fresh and frozen market species, sold through restaurants and fish markets. In tinned fish it appears occasionally from Caribbean, Pacific Island, and Southeast Asian producers. The Gulf of Mexico red snapper fishery has seen significant management improvements after severe overfishing in the late 20th century.
