Iceland
A North Atlantic island nation whose cold, clean waters and MSC-certified cod fisheries make it the world capital of canned cod liver. The delicacy, lightly salted and often beechwood-smoked, is rich in vitamins A and D and omega-3s, and is eaten on toast or in salads. Akraborg, founded in the fishing town of Akranes in 1989 and now part of Lýsi, is the largest canned cod liver producer in the world; the heritage Ora brand has anchored the Icelandic market for over half a century; and Lýsi, founded in Reykjavik in 1938, is the country's great fish-oil house. Triton and iCan round out a small but globally significant cluster, much of it powered by Iceland's geothermal energy.
