USISA, the Unión Salazonera Isleña, is an Andalusian conserva house rooted in Isla Cristina, the salt-curing town on the Huelva coast of Spain's Atlantic southwest. It works in the local salazón tradition, curing and canning anchovies, tuna and melva, the fish that built the town's fishing economy. The name follows the acronym convention common among mid-twentieth-century Spanish cooperative and industrial producers.
