Atlantic Salmon

Atlantic salmon (Salmo salar) is the primary farmed salmon species globally, produced in enormous quantities in Norway, Chile, Scotland, Iceland, and Canada. Wild Atlantic salmon populations have declined severely across most of their native range due to habitat loss, overfishing, and competition from escaped farmed fish. In tinned fish, Atlantic salmon appears primarily in smoked formats from artisan producers: Fishwife sources smoked Atlantic salmon from a certified sustainable Scottish smokehouse, and several Nordic producers tin farmed Atlantic salmon in olive oil and seasoned preparations. The farmed Atlantic salmon's high fat content makes it well-suited to smoking and preservation. Wild Atlantic salmon is commercially protected in most of its native range.
