Krill

Krill are small crustaceans of the order Euphausiacea, found in every ocean but most abundant in Antarctic waters where they form the foundation of the marine food web. Antarctic krill (Euphausia superba) is commercially harvested in increasing volumes for omega-3 supplements, fishmeal, aquaculture feed, and human food products. In tinned fish contexts, krill appear primarily as a specialty product in Japanese and Korean markets, where they are eaten as a shrimp-like food in their own right. Krill paste is a staple condiment across Southeast Asia. Direct-to-consumer krill products marketed as a sustainable protein source have emerged from Antarctic fishing operations in Norway and others.
