Crayfish

Crayfish are freshwater crustaceans of the families Astacidae, Cambaridae, and Parastacidae, found across every continent except Antarctica. They resemble small lobsters and are fished and farmed for food across Europe, North America, China, and Australia. The signal crayfish (Pacifastacus leniusculus) is the most commercially significant European species. In tinned form, crayfish tails in brine are a Scandinavian delicacy, particularly in Sweden where the crayfish party (kräftskiva) is a summer institution. Chinese aquaculture produces enormous volumes of crayfish for domestic consumption. Tinned crayfish tails appear from Swedish and European producers as a traditional preserved format.
