Milkfish

Milkfish (Chanos chanos), known as bangus in the Philippines where it is the national fish, is the dominant tinned fish species across Southeast Asia. Canned by major Filipino producers including Century Pacific Food (555, Century brands) in enormous quantities, milkfish appears in a range of formats from whole fish in brine to boneless smoked preparations. Less known in Western markets but one of the most consumed tinned fish species globally by volume.
