Red Mullet

Red mullet (Mullus surmuletus and Mullus barbatus) is a prized Mediterranean bottom fish known for its vivid colouring, delicate sweet flesh, and the intense flavour of its liver, traditionally left intact during preparation. Distinct from grey mullet (Mugil cephalus), red mullet has a long history in Mediterranean cuisine and appears in premium Spanish and Italian conservas. The fish is highly seasonal and its tinned form commands a premium price.
