Blackthroat Seaperch

Blackthroat seaperch, known in Japan as nodoguro, is a deepwater fish prized for its exceptionally rich, fatty flesh. Caught off the Sea of Japan coast, particularly around Niigata and Kyoto prefectures, it commands premium prices and is considered among the most luxurious fish in Japan. The distinctive black throat that gives the species its name marks an otherwise silvery-pink fish with firm, white meat.
