Ling

Ling (Molva molva) is a long, slender member of the cod family found across the North Atlantic and North Sea, distinct from the unrelated Pacific lingcod despite the shared name. In northern Spain it is prized more for its roe than its flesh: hueva de maruca, cured and tinned ling roe, is a delicacy served thin-sliced, the region's counterpart to bottarga. The fish itself is also salted and dried in the same tradition as true cod.
