Yellowfin Tuna
Yellowfin tuna (Thunnus albacares) is the second most important commercial tuna species globally by volume, caught across tropical and subtropical oceans from the Pacific to the Indian Ocean. In the United States it occupies the chunk light category alongside skipjack. In premium conservas from Spain, Portugal, and Italy, yellowfin is packed as ventresca (the fatty belly), cola, and loin cuts in olive oil. Tonnino and Donostia Foods are among the brands that have elevated yellowfin to a premium product in the US market. Yellowfin is distinguished from albacore by its darker red flesh, stronger flavour, and higher fat content in the belly sections. The largest yellowfin exceed 200 kg. Most commercial yellowfin is caught by purse seine, with pole-and-line and longline fisheries producing the premium product.
