Bluefin Tuna
Bluefin tuna encompasses three related species: Atlantic bluefin (Thunnus thynnus), Pacific bluefin (T. orientalis), and Southern bluefin (T. maccoyii). All three are among the largest and most commercially valuable fish on earth, and all three face significant conservation pressure from decades of overfishing. In tinned fish, Atlantic bluefin appears in artisan conservas from Sicily, Sardinia, Calabria, and the Basque Country, where almadraba trap fisheries have operated for centuries. The ventresca of Atlantic bluefin is considered the finest tinned tuna available, rivalling otoro sashimi in fat content and flavour depth. Producers like Callipo, Campisi, Real Conservera Española, and Solky work with extremely limited bluefin supplies. Pacific bluefin appears in premium Japanese conservas. Prices reflect rarity and the intense flavour of the flesh.
