Wolffish

Wolffish encompasses several species of the family Anarhichadidae found in cold North Atlantic and North Pacific waters, characterised by their fearsome dentition, used to crush shellfish and sea urchins. Atlantic wolffish (Anarhichas lupus) and spotted wolffish (A. minor) are the most widespread commercially significant. The firm, white flesh has a mild, slightly sweet flavour well suited to a range of cooking methods. Wolffish is primarily a fresh and smoked market species in Iceland, Norway, and Canada. It appears in tinned form from a small number of Icelandic and Nordic artisan producers. Atlantic wolffish is a Species of Concern in US waters, where populations declined significantly due to bycatch from groundfish fisheries.
