Trevally

Trevally is a common name covering numerous species of the Carangidae family found in tropical and subtropical waters across the Indo-Pacific and Indian Ocean. Giant trevally (Caranx ignobilis) and golden trevally (Gnathanodon speciosus) are among the largest and most commercially significant species. The flesh ranges from firm and pale to dark and strongly flavoured depending on species and size. Trevally is an important food fish across Australia, Japan, and Southeast Asia, sold fresh and occasionally processed into tinned formats by regional producers. In Japan, trevally species (aji) are among the most popular fish for both fresh consumption and preserved preparations.
