Turbot

Turbot (Scophthalmus maximus) is a large flatfish of the family Scophthalmidae found in the northeastern Atlantic and Mediterranean, one of the most prized and expensive food fish in European cuisine. The thick, firm white flesh has an exceptional flavour that has made it a fixture of fine dining from France to Spain. Turbot is almost exclusively a fresh market fish: its premium value and the delicacy of its flesh make canning an unlikely format. It is occasionally farmed in land-based aquaculture systems in Spain and France to supplement wild catch. When turbot does appear in preserved form it is typically sold smoked rather than canned.
