Marlin

Marlin encompasses several large billfish species of the families Istiophoridae and Xiphiidae, including blue marlin (Makaira nigricans), white marlin (Kajikia albida), and striped marlin (Kajikia audax). All are apex ocean predators, primarily targeted by recreational sport fishermen and, to a lesser extent, by commercial longline fleets. The flesh is firm and dark, with a rich, slightly sweet flavour. Marlin appears in tinned fish from artisan Sicilian producers who work with large pelagic Mediterranean species, and occasionally from Japanese producers. Population concerns limit the commercial availability of marlin products, and several species face overfishing pressure.
