Amberjack
Amberjack encompasses several large pelagic fish of the genus Seriola, found in warm and temperate waters across the Atlantic, Pacific, and Mediterranean. Greater amberjack (Seriola dumerili) is the most commercially significant, reaching weights above 70 kg and prized for its firm, richly flavoured flesh. In tinned fish, amberjack appears primarily from Sicilian artisan producers who work with Mediterranean species rarely encountered in mainstream conservas: Campisi and Adelfio in Marzamemi are among the producers who tin amberjack alongside bluefin tuna and swordfish from the same waters. The fish is sometimes labelled as ricciola in Italian conservas.
