Pompano

Pompano encompasses several species of the family Carangidae, most notably Florida pompano (Trachinotus carolinus) and permit (Trachinotus falcatus) in the Americas. The flesh is rich, fatty, and full-flavoured, highly regarded in fine dining. Florida pompano is one of the most expensive food fish in the US market. Pompano appears occasionally in tinned form from Caribbean, Gulf Coast, and Asian producers, though the premium fresh market absorbs most of the catch. The species is also aquacultured in limited quantities in the southeastern United States and Southeast Asia.
