Grouper

Grouper is a large family of sea bass (Serranidae) found in tropical and subtropical reef environments worldwide, prized for their firm, white, mildly sweet flesh. Several species are of commercial significance, including Atlantic goliath grouper, red grouper, and gag grouper in the Gulf of Mexico, and various grouper species across the Indo-Pacific. Grouper is primarily a fresh and frozen market fish. In tinned form it appears occasionally from Southeast Asian and Caribbean producers, and from specialty Mediterranean conservas makers working with local reef species. Most commercially caught grouper is sold through restaurant supply chains rather than into shelf-stable formats.
