Flounder
Flounder is a collective name for several species of flatfish in the families Pleuronectidae and Paralichthyidae, found in coastal waters across the Northern Hemisphere. The flesh is delicate, mild, and white, with a fine texture suited to gentle cooking. Flounder rarely appears in tinned fish: the delicate flesh does not hold up well to the retort processing required for shelf-stable products, making it better suited to fresh or frozen markets. When it does appear in preserved form it is typically from artisan producers experimenting at the edges of the conservas format, or in Asian markets where a broader range of flatfish species are processed.
