Plaice
Plaice (Pleuronectes platessa) is a flatfish of the North Atlantic and North Sea, one of the most commercially important European white fish species. The distinctive orange spots on the dark upper side make it immediately identifiable. The flesh is mild, delicate, and fine-textured. Plaice is primarily a fresh and chilled market fish in Europe, sold in fishmongers and by fish-and-chip shops across the UK and Netherlands. It is rarely found in tinned form, as the delicate flesh is poorly suited to retort processing. When plaice does appear in preserved format it is typically smoked rather than canned.
