Pollock

Pollock encompasses two commercially important species: Atlantic pollock (Pollachius virens) and Alaska pollock (Gadus chalcogrammus). Alaska pollock is the world's most abundant commercially harvested fish species and the basis of the largest single-species fishery on earth, managed out of the Bering Sea. It is the fish in most fast-food fish sandwiches and fish sticks, and a primary source of surimi (imitation crab). Atlantic pollock is caught in the North Atlantic and North Sea. Pollock rarely appears in premium tinned fish: the mild, affordable flesh is suited to processed formats rather than conservas. Occasional artisan producers offer pollock as a sustainable alternative to cod, with which it shares many culinary properties.
