Sablefish

Sablefish (Anoplopoma fimbria), also called black cod despite not being a true cod, is a deepwater fish from the North Pacific with one of the highest fat contents of any commercially caught fish, rivalling bluefin tuna belly. The flesh is silky, buttery, and richly flavoured, prized in Japanese cuisine as gindara and increasingly sought after in premium Western markets. Wild Planet and other Pacific Northwest producers have brought sablefish to the artisan tinned fish market, where it commands premium prices. The Alaskan sablefish fishery is MSC-certified and considered among the best-managed in the world. In the AllTinned database, sablefish appears under both its own name and Black Cod.
