Cobia

Cobia (Rachycentron canadum) is a large pelagic fish found in warm waters across the Atlantic, Pacific, and Indian Oceans, known for its rapid growth, firm white flesh, and strong, clean flavour. It is increasingly farmed in open-ocean aquaculture systems, particularly in Vietnam, Taiwan, and the Gulf of Mexico. The flesh is rich enough to be eaten raw as sashimi and holds up well to high-heat cooking. Cobia's exceptional growth rate and feed conversion ratio make it one of the most promising species for sustainable aquaculture. In tinned fish it remains uncommon, appearing occasionally from Southeast Asian producers and specialty US aquaculture operations.
