Wahoo

Wahoo (Acanthocybium solandri) is a large, fast pelagic fish found in tropical and subtropical oceans worldwide, known among sport fishermen for its exceptional speed and among chefs for its white, firm, mildly sweet flesh. It is closely related to the Spanish mackerel family. Wahoo is primarily a sport fish and fresh market species, rarely processed into shelf-stable formats. When canned, it appears from Hawaiian and Pacific Island producers who have access to fresh wahoo from local fisheries. The Hawaiian market has seen some artisan development of wahoo conservas in recent years.
