Mahi Mahi

Mahi-mahi (Coryphaena hippurus), also called dorado or dolphinfish, is a fast-growing surface-dwelling pelagic fish found in warm ocean waters worldwide. Its firm, mildly sweet white flesh and vivid green and gold colouring make it one of the most recognisable tropical food fish. Mahi-mahi is primarily a fresh and frozen market species, but it appears in tinned form from Hawaiian and Pacific Island producers and occasionally from specialty American conservas makers. The species is fast-growing and relatively resilient to fishing pressure compared to tuna species. Pole-and-line caught mahi-mahi from the Pacific supports some of the most sustainable commercial fisheries in the tropics.
