King Mackerel
King mackerel (Scomberomorus cavalla) is a large, predatory mackerel found in the Atlantic Ocean from North Carolina to Brazil and across the Gulf of Mexico. It is a popular sport fish and a commercially significant food fish in the southeastern United States, where it is sold as kingfish. The flesh is dark, oily, and richly flavoured, with a stronger taste than Atlantic mackerel. The FDA advises limiting consumption due to elevated mercury levels in larger specimens. King mackerel appears occasionally in tinned fish from Caribbean and Gulf Coast producers, though it is primarily marketed fresh or smoked.
How to eat it: strong and oily, best sharp. Laid on dark bread, or tipped over rice; a little goes a long way.
