Coho Salmon

Coho salmon (Oncorhynchus kisutch), also known as silver salmon, is a Pacific salmon species prized for its moderate fat content, firm texture, and bright flavour that falls between the richness of sockeye and the mildness of pink salmon. Major coho fisheries operate in Alaska, British Columbia, Washington, and Oregon. Coho is popular among sport fishermen and commands premium prices in the direct-to-consumer artisan market. In tinned fish it appears from Pacific Northwest producers including Wildfish Cannery and Salmon Market, typically as smoked or plain canned coho. The species also supports significant aquaculture production in Chile, though the wild-caught Alaskan product is considered superior.

How to eat it: flaked into eggs, on a cracker with cream cheese, or laid on rye. Gentle and approachable.
