The coast around Naples and the Cilento, home to one of Italy's most storied fish-preserving traditions. The fishing village of Cetara on the Amalfi Coast is famous for its anchovies and for colatura di alici, a translucent amber anchovy sauce descended directly from Roman garum and still made by aging salted anchovies in chestnut-wood barrels. Producers including Armatore, Iasa, and Sapori di Mare work in this tradition, packing anchovies, tuna, and mackerel, often by hand.
