Bornholm

A Danish island in the Baltic Sea, the Sunshine Island, famous above all for alder-smoked herring cured in the white-chimneyed smokehouses that dot its fishing villages. The local dish Sol over Gudhjem, smoked herring with raw egg yolk on rye, is a national icon. Bornholms, founded as a fishermen's cooperative in 1893, sources herring, cod, and salmon from the waters around the island and preserves them by traditional smoking and pickling. Bornholm has become one of Scandinavia's celebrated food destinations.
