Central Macedonia

The region around Thessaloniki in northern Greece, a centre of the country's modern fish-processing industry. Producers including Trata, Flokos, and KONVA pack anchovies, sardines, and mackerel, much of it from the northern Aegean. The Aegean's small pelagics underpin a Greek canning tradition less famous than its Iberian counterparts but genuine and growing.
