Navarre

An inland northern region whose town of Tudela and the fertile Ebro valley gave rise to one of Spain's great conserva traditions, originally built on vegetables and extended to fish. Producers including El Navarrico and Rosara pack anchovies, tuna, and bonito alongside their celebrated piquillo peppers and white asparagus, working in the artisan Riberan style.
