The south-west coast of England, where Brixham runs one of the country's largest and most storied fish markets, landing dozens of species daily. Devon sits at the centre of a recent British tinned-fish revival: Rockfish, founded by chef Mitch Tonks, hand-selects Brixham-landed sardines, mackerel, cuttlefish, and Lyme Bay mussels for its tinned range, while Sound Seafood works the same south-coast waters. The fish is the region's own, preserved in the conservas spirit. Mackerel, sardines, cuttlefish, and mussels define the Devon tins.
