Guangdong

A southern Chinese coastal province on the South China Sea with a long fishing and food-preserving tradition centred on the Pearl River Delta. Historic producers including Pearl River Bridge and Eagle Coin pack fish and seafood here, drawing on the delta and coastal fisheries. Dace, mackerel, and other regional species are packed in the southern Chinese style, often in black-bean or fermented preparations.
