Euboea

Euboea (Evvoia) is a long Aegean island northeast of Athens, in central Greece. Its northern coast around Asminio and Istiaia has a salt-fish curing tradition: locally landed anchovies, sardines and mackerel are cured in sea salt and packed in tins and jars. The island's clear Aegean waters and proximity to seasonal anchovy runs support a small but established preserved-fish industry.
