Named for the ronqueo, the traditional cutting ceremony in which a whole bluefin tuna is broken down by hand, a technique the fishing towns of Cádiz have practiced since the Phoenicians. Founded in Barbate in 2002, El Ronqueo focuses exclusively on Atlantic bluefin from the almadraba trap fisheries. No preservatives; pasteurization only.
