Embrace

Founded in 2019 by Carmen Bonfante and Giusy Gambini around a single five-hectare grove of sixty to seventy year old Nocellara del Belice trees at Menfi, in southwestern Sicily, Azienda Agricola Evo Sicily built the Embrace name on its Sicilia IGP olive oil before turning that oil toward the sea. Its small tinned line packs Sicilian anchovy fillets, whether salted, rolled with almonds, or laid with sun-dried tomatoes, in the estate's own EvoSi oil, a Nocellara del Belice and Biancolilla blend, rather than the neutral seed oil most filetti are laid down in, so the tin carries the same oil as the bottle.
