La Merìca is the brand of Lalaina, a Mazara del Vallo company founded in 2020 by Maria Chiara Valdemone and Giuseppe Gaudioso. Its single product, Colatura di Gambero Rosso, launched in December 2022 and patented in 2023, extracts the eggs and juices from red prawn heads and carapaces bought as processing waste from Mazara boats, producing a salt-free, shelf-stable condiment in glass bottles.
