Lofoten is the brand of Lofotprodukt AS, founded in 1994 at Leknes in the Lofoten islands as Lofot-Delikatesser and renamed Lofoten in 2003. It runs what it calls Norway's largest fish cake factory, opened in 2011, and packs mackerel in tomato from Norwegian fish in Norway alongside fish cakes, burgers and smoked salmon.
