Fukuoka

A northern Kyushu prefecture facing the Genkai Sea, with a strong fishing and food-preserving culture centred on Hakata. Best known for mentaiko, spiced pollock roe, the region also supports canned-fish producers. Fukuya, the originator of mentaiko, and Hyakunendoko Usami work in this tradition.
