Last Catch sells one thing: a single 2016 vintage of canned rainbow trout from Lake Zaovine in Serbia's Zlatibor mountains, made by River Fish DOO before the company dissolved in 2017.The pitch borrows from wine and whisky, a decade of sealed maturation turning a preserved fish into something closer to aged Parmesan, all umami and softened texture.Only 6,000 cans remain, sold at 45 euros each with no reissue planned.It is less a shop than a closing window on a technology nobody makes anymore.
