Solex Catsmo joins two houses: Catsmo, the Hudson Valley smokehouse Robert Simon built in a Wallkill garage in 1995 after a neighbour could not smoke his sport catch, and Solex Fine Foods, the importer Markus Draxler, once Daniel Boulud's maitre d', founded in 2011 and named for his daughters Sophia and Alexia.Solex bought Catsmo in 2012, and the business supplies smoked salmon and NOIR caviar to top restaurants, so its tinned fish is a small adjacent line rather than the point.
