White Tuna
White tuna is the commercial and legal designation in the United States for albacore (Thunnus alalunga), the only species permitted to carry the white tuna label under US FDA regulations. Albacore produces the palest, mildest, most texturally refined tuna flesh of the commercially canned species, with a delicate flavour that stands apart from the stronger skipjack and yellowfin used in chunk light and standard canned tuna. Premium albacore is pole-and-line or troll-caught in the North Pacific, where the fishery received the world's first MSC certification in 2007. American Tuna, Fishwife, Wild Planet, and Genova represent the range from artisan to premium mass-market. Albacore is also the species behind Italy's tonno bianco and Spain's bonito del norte, though those regional designations carry their own traditions distinct from the US white tuna category.
