Pujadó Solano

One of the oldest anchovy producers in L'Escala, Girona, preserving the Catalan tradition of Mediterranean salt-curing that runs parallel to the better-known Cantabrian method. The double surname is the Catalan naming convention. L'Escala anchovies are cured and hand-filleted in a style the town has maintained since the ancient Greeks fished the same bay.
