Zarotti

The historic Zarotti cannery was founded in Parma in 1952, but its roots run south to San Marco di Castellabate in the Cilento, where the Scermino family ran a fish-conserve plant of their own before acquiring the Parma company in the 1990s. Production still centres on the Cilento coast, where the anchovies are filleted by hand in the local tradition, while Parma holds the commercial and distribution side. The range runs from anchovy fillets to tuna, shellfish and seafood creams, and the firm carries Italy's Marchio Storico di Interesse Nazionale for its more than seventy years in the trade.
