Conservas Avelina is a fourth-generation Santoña (Cantabria) anchovy house tracing to great-grandmother Maria Rodriguez, who packed anchovies by the Santoña marshes in the late 1800s; the family returned to production in 2015, maturing Cantabrian anchovies 9 to 12 months in barrel alongside gourmet conservas.
