Conservas Evama cans mussels and sardinillas in Boiro, on Galicia's Ría de Arousa, continuing a family line three generations deep. Its mussels carry the DOP Mexillón de Galicia seal and grow for 20 to 24 months on rafts in the Rías Baixas before being packed in escabeche. Small sardines in olive oil complete a deliberately short catalogue.
