Momoya has been making jarred staples for Japanese tables from Tokyo since 1920, best known for the nori paste Gohandesuyo. Its ika shiokara, squid fermented in its own salted innards, ages for at least a year, several times longer than the market norm. The jars sit on rice-bowl duty in households across Japan and in Japanese groceries abroad.
