Gusti Pregiati
Pino Spanu founded Tharros Pesca at Cabras, in Sardinia's Oristano province, in 2004, and sells its output under the Gusti Pregiati label. The house is one of only five producers still making authentic bottarga di muggine in Cabras, curing mullet roe alongside tuna, smoked and salted fish, and fish sauces from Mediterranean catch.
